The other day, I bought some nasty "cream cheese." It didn't taste like cream cheese at all. It was also $5, so I wasn't going to just chuck it. I figured that I could probably mix it with other things, pour it over pasta and I'd be good to go.
And I was.
- 8 oz. tofu "cream cheese"
- 1 small onion, finely chopped
- 2 c. mushrooms, sliced
- 4 garlic cloves, minced
- 3 c. spinach, sliced
- cayenne pepper (to taste)
Sautee onion in olive oil until almost translucent. Add mushrooms and fry until mushrooms are cooked. Drain excess liquid, then stir in spinach and garlic. When the spinach is soft, stir in the "cream cheese" until melted. Add cayenne. Toss with pasta. Consider locking yourself in your room so you don't have to share.
